I’m not always entirely sure what to do with left overs. But I do feel freer to experiment. Left over braised beef brisket and carrots, simple, throw them on a pizza. It tasted really good. The brisket was great on the pizza and the carrots added a bit of sweetness.

Beef brisket, amazing!
I was looking for a slightly cheaper ‘cook-it-low-and-slow’ joint of meat for a family party. I came across a recipe by Nigel Slater for braised beef brisket.
First you roast the brisket for 25 mins, and then stew it for 4 hours in a broth with porcini mushrooms, carrots, shallots, black pepper corns, thyme and bay leaves.
Remove the beef and reduce the broth. Slice the brisket and cover in the reduced broth.
It was absolutely delicious. So succulent and melt in the mouth. The broth had a great earthy meaty umami taste.
I had it with some roast potatoes, steamed green vegetables and the carrots and shallots cooked with the brisket.
I’m definitely going to do this again. 😀🐄

Kung Pao cauliflower
Kung pao cauliflower and fried vegetables. I was stuck with a cauliflower and wanted something a bit different and found a recipe – https://circusgardener.com/2015/08/15/kung-pao-cauliflower/
It was good but I think I would use less soya sauce. I also made some simple fried vegetables with a tbsp of soya sauce, mirin and sesame oil.
Pumpkin pasta 🎃🍝
What to do with leftover pumpkin? It’s ravioli time! I hadn’t made it for. Dusted off my Woolworths pasta maker. Used a Jamie Oliver recipe for the pasta. Then fried chopped pumpkin in butter with onions, garlic, splash of wine and herbs until turned into tasty mush. Let it cool and made ravioli. I also made some tagliatelle with the leftover pasta. Boiled them up for a few minutes. Then popped them in a pan with melted butter and sage. Covered them in parmesan. Totally totally delicious 😀🎃🍝
Mackerel and smokey veg
Friedd mackerel and smokey paprika veggies with cous cous and cracked bulgar wheat.
Dried, oil and a sprinkle of salt and fried mackerel fillets a couple of minutes each side.
Chopped and sauted onion, aubergine, tomatoes, garlic and smoked paprika.
Boiled cous cous and bulgar wheat for 10 minutes and added green beans for the last 3 minutes.
Mixed veggies and cod cous bulgar wheat. Salt and pepper and lemon on mackerel and then eat!
Paprika salmon 🐟
Andd guess what I had for dinner? Yes that’s right, smoked paprika salmon. Exactly the same process as with the squid I had for lunch (see earlier post). Dust salmon in smoked paprika and flour. Shallow fry in oil about a minute each side. I had it with red pepper tomato sauce and roasted sweet potatoes. All totally delicious. Although everything on the plate was a bit orangey-red! 🐟🍅🍠
