A friend gave me a big bunch of basil and I knew straight away what I wanted to make, pesto! I love fresh pesto. It’s so different to shop bought and so easy. Clove of garlic and salt in pestle and mortar, then a handful of basil, toasted pine nuts, parmesan cheese, olive oil and a squeeze of lemon juice. So so delicious. I put dollops on a homemade pizza and it was fantastic.
Purple pesto. Having received a bunch of purple basil in my veg box, I didn’t know what to do with it. I tried some and it seemed to taste the same as green basil. So I thought what better than some real homemade pesto.
I used Jamie Oliver’s recipe (www.jamieoliver.com/recipes/vegetables-recipes/pesto/). It was very quick and easy whizzing up all the ingredients.
I griddled some courgette, peppers and asparagus, and chopped up some tomatoes and avocado.
I then put a big dollop of purple pesto on the side of all the veggies. It was simply delicious.
